Instructions
Prepare the Strawberry Cake
Bake the strawberry cake according to your recipe.
Allow the cake to cool completely while you prepare the sugar cookie crust and cheesecake filling.
Make the Sugar Cookie Crust
Prepare homemade sugar cookie dough.
Press the dough evenly into the bottom of a springform pan.
Bake at 325°F (163°C) for 15 minutes.
Remove from the oven and let the crust cool for 10 minutes.
Prepare the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla bean paste until smooth and fully combined.
Add 1 egg for each block of cream cheese used, mixing well after each addition until just incorporated.
Assemble the Cheesecake
Pour enough cheesecake batter over the cooled sugar cookie crust to completely cover the bottom.
Carefully place the cooled strawberry cake layer in the center of the cheesecake.
Pour the remaining cheesecake batter around and over the cake layer, making sure it is completely covered.
Bake the Cheesecake
Bake at 275°F (135°C) for 45–50 minutes, or until the edges are set and the center has a slight jiggle.
Turn the oven off completely and crack the oven door open. Allow the cheesecake to cool gradually in the oven until it reaches room temperature.
Transfer the cheesecake to the refrigerator and chill overnight before decorating.
Strawberry Crunch Topping
Crush the Golden Oreos into coarse crumbs.
Stir together the crushed cookies, 1 tablespoon melted butter, and 2 tablespoons strawberry gelatin (Jell-O) powder until evenly combined.
Homemade Whipped Topping
In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla bean paste.
Beat until stiff peaks form.
Spread or pipe onto the chilled cheesecake, then finish by sprinkling the strawberry crunch topping over the whipped cream before serving.
